Nettle needs no introduction to anyone who's brushed one: hollow hairs inject formic acid and histamine on contact. Cooking, drying or crushing disarms them completely, revealing one of Europe's best wild foods — spinach-like, and denser in iron, calcium and protein than most cultivated greens. Armies have been clothed in nettle fibre and fed on nettle soup.

Medicinally the leaf is used for hay fever and as a mineral-rich tonic tea; the root, separately, has decent trial evidence for easing urinary symptoms of benign prostate enlargement (BPH). Leaf extracts also reduced arthritis pain in small studies — fittingly, since deliberately stinging arthritic joints (urtication) is one of Europe's oldest counter-irritant treatments.
