Was ist Parsley?
Parsley is a biennial herb of the carrot family from the eastern Mediterranean. The ancient Greeks wove it into victors' wreaths and funeral garlands before it became a kitchen staple. Flat-leaf (Italian) parsley has the stronger flavour; curly parsley is milder and crunchier; Hamburg parsley is grown for its parsnip-like root. The leaves are rich in vitamin K, vitamin C, folate and the flavonoid apigenin.
In traditional European medicine, parsley leaf and root were used as mild diuretics to "flush" the urinary tract — a traditional use regulators still recognise, though trials are lacking. Most of parsley's real value is nutritional when eaten in quantity. The seeds and seed oil are a different matter: they contain apiol and myristicin, and in large doses they are toxic.

A generous handful of parsley provides well over a day's vitamin K and a useful amount of vitamin C and folate. As a scattered garnish the contribution is small — use it like a salad leaf to benefit.
Brightens food without salt
Its fresh, green, slightly peppery flavour lifts rich stews, grilled fish, grains and beans, helping food taste lively with less salt.
Traditional mild diuretic
Parsley leaf and root tea has long been used to increase urine flow and "flush" the urinary tract. Animal studies support a mild diuretic effect; good human trials are lacking.
Apigenin and antioxidants
Parsley is one of the richest dietary sources of apigenin, a flavonoid with anti-inflammatory and other effects in lab and animal studies. What this means for people eating parsley is not yet known.
Fresher breath (a little)
Chewing fresh parsley after garlicky meals is a traditional breath freshener. It may mask odours briefly; it does not fix the causes of bad breath.

As a salad herb
Make tabbouleh with lots of finely chopped flat-leaf parsley, mint, tomato, a little bulgur, lemon and olive oil — parsley should be the main ingredient, not the garnish.
Sauces
Salsa verde (parsley, capers, anchovy, garlic, vinegar, olive oil), chimichurri, or gremolata (parsley, lemon zest and garlic) sprinkled over stews and roasted fish.
Stems and roots
Don't throw away the stems — they carry the most flavour and are perfect in stocks and soups. Hamburg parsley root can be roasted or added to soups like parsnip.
Storing
Trim the stems and stand the bunch in a glass of water in the fridge with a bag loosely over the top; it keeps for a week or more. Chopped parsley freezes well for cooking.
Tea (traditional)
1–2 tsp dried leaf (or a small handful fresh) per cup, covered, 10 minutes; 1–2 cups daily for short periods. Use leaf or root — never seeds or seed oil.

- Pregnancy: normal food amounts are fine. Avoid medicinal amounts, parsley seed, parsley seed oil and apiol products — they can stimulate the uterus and were historically misused to induce abortion, sometimes fatally.
- Warfarin: parsley is very high in vitamin K. You don't need to avoid it, but keep your intake steady from week to week; a sudden jump (say, daily tabbouleh) can lower your INR. Tell your anticoagulation clinic about big changes.
- Parsley seed oil and large medicinal doses can damage the liver and kidneys. Avoid medicinal amounts if you have kidney disease, don't use parsley tea for swelling caused by heart or kidney problems, and do not combine parsley supplements with diuretic drugs or lithium without medical advice.
- Allergy: people allergic to celery, carrot, fennel or mugwort pollen may react to parsley (the "celery–carrot–mugwort–spice" pattern).
- Very large amounts may make skin more sensitive to sunlight in some people.
