Green cardamom is the seed pod of a tall ginger-family plant native to the rainforests of southern India and Sri Lanka, though today Guatemala is the world's largest producer. Pods are picked by hand before they ripen, which helps explain why it ranks among the priciest spices. Its flavour — sweet, floral and cooling — comes from volatile oils including 1,8-cineole and alpha-terpinyl acetate.

In Ayurveda and Arab tradition cardamom is valued as a digestive and breath freshener, chewed after meals or brewed into coffee and tea. A few small human trials have looked at cardamom powder for blood pressure, blood sugar and inflammation markers, with some encouraging but inconsistent results. It is best treated as a wonderful spice with a gentle traditional reputation, not a treatment.

Traditional digestive

Cardamom is a classic carminative for wind, bloating and a heavy stomach, and is often added to rich dishes and milky drinks for that reason. This rests on long traditional use rather than trials.

Chewing a pod or a few seeds after meals is a centuries-old custom in India and the Middle East; its aromatic oils freshen breath and inhibit some mouth bacteria in lab studies.

A small pilot study in people with high blood pressure, and several small trials in people with prediabetes or metabolic problems, reported modest improvements with daily cardamom powder. Results are mixed and need larger trials.

Chai

Simmer 3–4 lightly crushed pods, a slice of ginger and a small piece of cinnamon in 1 cup water for 5 minutes, add black tea and ½ cup milk, bring back to a simmer, strain and sweeten to taste.

With coffee

Add 1–2 crushed pods to the grounds in a cafetière or moka pot, or grind a few seeds with the beans — the Arabic gahwa tradition.

Baking and desserts

Grind seeds fresh for Nordic cardamom buns, rice pudding, kheer, custards and fruit compotes. Ground cardamom loses its perfume quickly, so buy whole pods.

Savoury cooking

Add a few whole pods to rice (biryani, pilau), curries and braises; they perfume the dish and can be removed before serving.

After meals

Chew one pod or a few seeds slowly as a traditional breath freshener and digestive.

  • Culinary amounts are considered safe, including in pregnancy and breastfeeding. Avoid concentrated cardamom supplements in pregnancy — they have not been tested for safety.
  • Some herbal references advise people with gallstones to avoid medicinal amounts, as cardamom may stimulate bile flow and trigger pain.
  • Because supplement doses have shown small effects on blood pressure and blood sugar in trials, check with your doctor or pharmacist if you take medication for either, or anticoagulants, before using high-dose cardamom.
  • Allergy is rare; contact dermatitis has been reported in people who handle the spice a lot.
  • Cardamom essential oil is concentrated and should not be swallowed or applied undiluted; keep it away from children and pets.
